Cider Time



Childhood memories of apple picking is putting us in the mood for apple cider. It's a great time to visit your local farmers market or pick your own apples from your fav orchard, to stack up for the fall season. 

The SFG's enjoy mulled cider. The warm adult beverage is fabulous for a chilly fall evening. Below is the recipe.

INGREDIENTS1/2 gallon of fresh, apple cider1 orange15 cloves4 3-inch sticks of cinnamon1 teaspoon of nutmeg7 pods of cardamon
Dash of all-spice Your favorite Bourbon/Brandy

METHOD


  1. Pour apple cider into a 3-quart saucepan, cover, turn the heat on medium-high. While cider is heating up, take a vegetable peeler and peel away a couple thick strips of peel from the orange. Press about half of the cloves into the peeled part of the orange. (You can also just quarter the orange and add the slices and cloves separately. Place orange, orange peel strips, the remaining cloves, and the rest of the ingredients into the sauce pan with the cider. Keep covered and heat the mulled cider mixture to a simmer and reduce heat to low. Simmer for 20 minutes on low heat.
  2.  Use a fine mesh sieve to strain the hot mulled cider away from the orange, cloves, and other spices. If you want, you can add a touch of bourbon, brandy, or rum to spike it up a bit. Serve hot. Add a cinnamon stick to each cup if desired.

Holloween Hump Day

Tomorrow's the day where you will either go trick or treat or give out the treats. Either way, do it responsibly and eat candy in moderation!
One thing that we have incorporated for treats, is giving out small bags of fruit snacks or popcorn balls for the kiddies. These don't contain all of the cals and sugars like the others. Please keep in mind, regardless of what your food preference is, don't deprive the kiddos of getting their treats.

Skinny Travels

If there is one thing that the SKGs sincerely love, it is to travel to countries rich in flavor. From the hills of Tuscany to warm waters of the Caribbean, the SFGs, never return home on an empty stomach. 

Many think that while on vacation, it's a challenge to freely indulge in the authentic cuisine while remaining conscious in our eating. However, it can be done. One important trick that the SFGs swear by, is eating what you love but only in moderation and substitution.  Of course a European trip would not be complete without  carbs right? But what about substituting a week of Penne and Alfredo Sauce with a mixture of roasted chicken, veggies and white wine sauce, or skip the sauce all together and reach for the rich and peppery olive oil. Of course we're not saying you can't enjoy the higher calorie dishes, just not for the entire trip.  Case in point, there is always a way to keep it skinny where ever you go and still enjoy what the world has to offer in cuisine.

Mexican Skinny Sunday

(Blue corn veggie enchiladas with black bean sauce and guacamole salad)

Mexican cuisine is often labeled as heavy and high in calories, however, you will be surprised to know that some restaurants offer healthy and figure friendly menus with the same flavor-filled taste. This blue corn veggie enchilada from Chuy's Mexican Restaurant, is prepared with black bean sauce, filled with a veggie medley, and topped with spinach and lightly grated cheese. To minimize the carbs, a guacamole salad with all the fixings replaced the Mexican rice. Top off this fabulicious meal with a skinny margarita and you will have a fiesta in your mouth.

Margherita Monday's


Skinny Margherita's are not only a fab beverage, but also an awesome comfort food for those busy evenings. I'm referring to Skinny Margherita Pizza. The ingredients are few and the recipe is quite simple.  If you have 30 minutes to spare, you will have a fabulicous low-calorie meal that the entire family will love. Magen has already provided you with a few main ingredients in her Veggie Naan Pizza post; with a few moderations, you again will be set to transform a comfort food fav, to healthy option fav. 




Ingredients:

- 1 package of whole wheat garlic naan 
- 2 clusters of vine tomatoes
- 5 oz of firm slim mozzarella cheese 
- 1 cup of fresh basil leaves
- A couple of drizzles of Evoo

Directions:

1. Preheat the oven to 450 degrees
2. Vertically slice tomatoes medium to thin
3. Place tomato slices on naan bread and drizzle Evoo.
4. Thinly slice firm mozzarella vertically and place three to four slices on naan bread. 
5. Place prepared naan on a non-stick baking sheet and drizzle with Evoo.
6. Let pizza bake for 15-20 minutes (depending on your oven) or until melted to your desired consistency. 
7. Remove pizza from oven and place fresh basil leaves on the pizza and place back in the over for 2 minutes.
8. Remove pizza from the oven and you are ready to eat!

Skinny Sunday Breakfast


From IHop, to Denny's, to our favorite French breakfast cafe, breakfast is typically not complete without some style of good o'l tasty eggs. The SFG's generally prepare and order scramble egg whites, however, this morning we decided to put a spin on things and create a Skinny Egg White Frittata, filled with mushrooms, green bell peppers and spinach, topped with grilled Advocado. Top it off with a glass of Silk Chocolate Milk, and you're set to start off the beautiful morning!
